Leading Resort is seeking an Executive Sous Chef
12 F&B outlets, from coffee shops, bar & lounges, multiple patios, casual and upscale casual fare to theme & fine dining Restaurants.
The ideal Candidate is a very experienced Chef, active and involved leader experienced in management of multiple people in a multi-outlet operation, preferably a 4 or 5 Star Hotel. Excellent, professional working environment.
The Executive Sous Chef directs and organizes the kitchens, food productions and all culinary function within the Resort. Maintains high standards of quality, service and merchandising to maximize profits.

DUTIES AND RESPONSIBILITIES
- Provide overall direction, coordination, and ongoing evaluation of all food productions & kitchen operations.
- Assist with overall direction, coordination, and ongoing evaluation of all Food & Beverage operations.
- Assist in scheduling and payroll for the Food and Beverage Department.
- Aid the Executive Chef in budgetary, projections, and cost control skills to be applied to the daily operations of the Food and Beverage Department.
- Aid the Executive Chef in departmental hiring, training, evaluations and diplomacy actions.
- Demonstrates a “hands on” approach to the training and leadership of Sous Chefs and Chef De Parties in a multi-outlet environment
- Assist and manage in implementing departmental policies & procedures.
- Ensure maintenance of safety and sanitation standards and policies.
- Collaborates with the Executive Chef on a daily or required basis as necessary to discuss any operational aspects of the kitchen
- Understand security requirements.
QUALIFICATIONS AND EXPERIENCE
Minimum of 5 Years experience in a senior Chef role in a high Volume, multiple outlet Food & Beverage environment with diverse concepts.
Food and Beverage “front of the house” management experience with demonstrated knowledge.
Excellent leadership qualities with a high ability for culinary craftsmanship.
Effective decision-making and directing staff diplomatically.
Excellent communication skills
Outstanding organizational skills and highly proficient at multi-tasking
Demonstrated excellent Customer relations.
Red Seal or similar certification.
Demonstrated ability to perform effectively in a team environment
Extensive knowledge of Restaurant, Bar/Lounge, and Kitchen operational procedures.
Knowledge of menu composition, food preparation and basic food handling and sanitation standards.
Experience in a Ski Resort setting a definite asset.
